I Want to Look the Fish in the Eye
I like to touch the food I make. I believe in making simple foods with fresh ingredients. I prepare my meals with honesty and I don’t fuss over them too much or cover the natural flavors with too many spices. Good cooking is simple easy and fast.
In the Bay Area we have so much available to us and I draw from all of it. My hands are not tied to any one cuisine. I like to mix and match from all the flavors of the Bay Area. Just the other day I made meatballs with Indian spices and pared that with Italian style vegetables and served it all over mashed potatoes—it was a hit!
When I shop I like to use local suppliers. I believe in using only seasonal ingredients that are fresh and hand picked by me. When I go to the market to get vegetables I like to pick them up and feel them. If they don’t feel right I don’t use them. When I buy fish I want to look the fish in the eye.
I prefer to buy all my foods as whole as possible and do all the preparation at the restaurant. We filet the fish ourselves and debone the chicken and cut up the meat. We even prepare our own chicken stock to make sure it has exactly the right flavor for our soups.
Fresh, simple, easy food that is what my style of cooking is all about.
